So this issue isn't about the farting (though based on your description she should probably see a proctologist and/or a dietician). It's about the fact that she thinks it's funny to push your boundaries.
I dated somebody like that for a long time. It started with her twisting my nipple. She did it once just to be a brat and I had an extreme reaction because she managed to snag a few hairs and it really fucking hurt. She thought my reaction was the funniest thing she'd ever seen. I asked her never to do it again, but she started doing it all the time, even in public. The madder I got, the funnier it was to her. She didn't give a shit how much it hurt or embarrassed me.
Eventually she got bored of twisting my nipple so she found other ways to annoy me. When she found one that got the reaction she wanted she'd do it over, and over, and over again. I tried asking nicely, asking not nicely, even threatening to break up but nothing worked. The fundamental issue was that she didn't respect me enough to put my wishes over her own amusement.
This girl doesn't respect you. Even if you get her to stop weaponizing farts she's just going to find something else that gets under your skin and do it because she thinks your discomfort is funny. IMO it's not worth being with someone who is that disrespectful and immature.
It's not too easy, it is exactly the right thing to do.
