Have a discussion with her first in general terms. Would she want to know if you were with someone else while you were on a break? Would she want to know if you kissed a friend of yours while you weren't together? If she answers yes then you tell her. But she may answer no – I know I would. It literally is none of my business what my bf did when we were not together and I trust him fully to manage his former flings and friends etc, I don't have a particular need to get involved. But people are different so best talk to her about that first.
It is OK to feel hurt and sad, it is OK to feel your feelings. But she has been very clear that she does not want to continue in the relationship and (for the moment at least) she does not want any contact with you.
When i try to reach her (via messages or call her), she behaves like she has nothing to do with me anymore, not even interested in being friends. I just can't process all of this, I can't get over it, I don't know what to do. Since this has been my only relationship ever, I've got no idea what to do. Why did she turn 180° in just a week or two.
Respect her wishes and leave her alone. Focus on your schoolwork, your friendships, your family, your hobbies. Eat well, stay hydrated, get lots of sleep. It will take time for you to process all of your feelings – maybe months. That's OK. Be kind to yourself.

Sorry about your loss, and congratulations on your wedding. Your mom might have been caught off guard and maybe in a few days she'll come around. If not I like the idea of you finding someone else if you want to walk with someone. You could also do a meghan Markle and your father in law walk you down or part way down. Or yeah think about someone meaningful to you. Your mom may also have been wanting to see you walk down the aisle.. might have always been something she pictured and she may want to live that out.
Talk to him. Why is he doing this? If it's just to “punish” you, it's super childish and he should learn healthy communication. Honestly, it's difficult for me to understand this whole situation but it seems like you both should learn to communicate your needs.
