I mean frankly I probably wouldn’t want to stay in the hotel under these circumstances bc it sounds like a hassle and I assume my husband would have invited me or offered to stay home himself.
But OP already is feeling uncomfortable/insecure, and voiced this insecurity, and his wife is saying “I WILL be staying in this hotel, alone. You may not join at any point during the evening and I will not be home til morning”.
At a minimum I think that’s inconsiderate of OP’s (reasonable) feelings.
Your EX is an EX for a reason and any new relationship with them is a NEW relationship. That old relationship and experiences is dead and gone. The person you knew is dead and gone. You have both grown to be different people. Don't let rose colored glasses of the past hurt your present.
You are also doing your current partner a disservice and being terribly disrespectful even giving this much emotional energy to thinking about another.
