In that case, it sounds, like he is codependent on you. Does he lack a life of his own, that could be considered independent of your relationship (hobbies, friends etc)?
Being clingy and controlling is an easy way to destroy a relationship and make someone fall out of love. Although, I imagine your bf to be too delusional to be able to even see his actions as clingy/controlling.
Your apologising is part of the problem. Do not apologise for things you do not think were wrong, especially if you would do them again in the same circumstances. You validate his view that what you did is wrong.
We add to that your statement that you cater to his every need, and I think you would be better off without him, while he would fall apart without you. Perhaps there is context that suggests otherwise, but I work with what I have now.
